Cheesecake Fixes Everything

Some days I've realized are longer than others. On the nice warm, sunny days it seems time zips on by while on the rainy, gray and gloomy days it seems to drag on. To pass the latter of the days, I've decided to start trying out new recipes I find online. The latest one was a chocolate chip cheesecake bar. Ahhmazing! Super easy and but it looks way more complicated and delicate. Next time I'll top it off with a little whipped cream and some chocolate syrup or something for a different look. Although, it does look good just sitting there, waiting to be demolished.

 I failed to ration out my cookie dough when I started because I was concerned the cheesecake mixture would run through the bottom. Next time I'll just crumble up the cookie dough on the top to make it look better.

But I did pre cut it and make little bars before I brought it anywhere and it looked amazing then. Definitely will be making this one again.

I took the recipe from an old pillsbury cookie dough container - I also saw it on mrfood.com the other day while browsing through pininterest, my new found addiction.

Cooking Time: 45 min


What to buy: 
3 (8-ounce) packages cream cheese, softened 
eggs 
3/4 cup sugar
 1 teaspoon vanilla extract 
2 (16.5-ounce) rolls refrigerator chocolate chip cookie dough

Instructions
  1. Preheat oven to 350 degrees F.
     
  2. In a large bowl, beat together cream cheese, eggs, sugar, and vanilla extract until well mixed; set aside.
     
  3. Slice cookie dough rolls into 1/4-inch slices. Arrange slices from one roll on bottom of a greased 9- x 13-inch glass baking dish; press together so there are no holes in dough. Spoon cream cheese mixture evenly over dough; top with remaining slices of cookie dough.
     
  4. Bake 45 to 50 minutes, or until golden and center is slightly firm.
     
  5. Remove from oven, let cool, then refrigerate. Cut into slices when well chilled.

You could be really ambitious and make cookie dough from scratch and it turns out just as well, if not better. But I was lazy this week and decided to go with the cheap rolls or cookie dough at my local grocer.
